Our Story
Life Is Short. Eat Dessert First.
Strawberry shortcake-style treats and sweet dessert service for events everywhere.
Every event gets our signature shortcake — an airy, crisp pound cake topped with fresh cut strawberries, strawberry reduction, and fluffy whipped cream, served by a team that keeps the line moving and the smiles coming.
Our Story
A daughter's joy, turned into dessert
The Strawberry Shortcake started with a little girl named Avery and a family that had already spent years running food trucks — just never a dessert one. Dessert had always been a guilty pleasure, and making strawberry shortcake with Avery's grandmother brought back fond memories. It all started with a recipe from Iowa (a box of Bisquick, a few tablespoons of sugar, and strawberries fresh off the farm) and turned into the idea for a whole concept.
What makes it different is that nobody else is doing it. Our airy, crispy pound-style cake is baked, topped with fresh cut strawberries, a strawberry reduction simmered down to a sweet sauce, and fluffy whipped cream — sweet, a little savory, and impossible to stop eating after one bite. Once the line forms, service moves fast: everyone starts with the same base, then we top it with whipped cream and their favorite topping, so guests get back to the party before dessert's even done.
Today, The Strawberry Shortcake stands for putting a smile on someone's face and making their day a little sweeter — especially at family and kid-friendly events, where watching genuine joy over dessert never gets old. It's not work when you love it, and we do.
Life is short. Eat dessert first.

Your Booking Team
The Friendly Faces Behind Your Sweet Finish
Our team is helpful, friendly, and energetic — ready to help you plan dessert service around your guest count, timing, and setup so the day feels bright, nostalgic, and easy to enjoy.
David
Senior Booking Agent
Big-scale forecasting is where David shines, honed by 30 straight days sizing 1,500 daily meals for Chevron and a Covid-era run keeping FedEx supplied at roughly 1,200 meals a weekend — the same instincts he brings to planning a sweet dessert service for events of any size. Should equipment ever falter mid-event, he's ready to shift from truck to buffet service so shortcakes and treats still reach every guest without a hiccup. His work behind Colorado's statewide health and fire reciprocity bill also means less local red tape standing between your celebration and a cheerful dessert option that's bright, nostalgic, and easy to enjoy.
Brandon
Senior Booking Agent
Long before shortcakes and dessert buffets, Brandon was learning the hospitality ropes in 2003 at Red Robin and Isle of Capri in Black Hawk, moving through front-of-house, expediting, and banquet setup on his way to 12 years in food truck and catering logistics, 6 of them hands-on with live kitchens and food production. That background now shapes a sweet dessert service for events like Amazon, Starbucks, the Denver Broncos, the Denver Nuggets, Southwest Airlines, Harvard, and Texas A&M, with his deepest market knowledge in Denver, Fort Collins, Miami, Fort Lauderdale, Boston, and San Francisco, where he screens every catering team on service quality, reviews, food, and presentation and moves fast to bring in a replacement if something's off. His planning advice keeps things bright, nostalgic, and easy to enjoy: a simple, focused menu is what lets a truck deliver a cheerful dessert option for groups without slowing the line.
Jess
Food Truck Booking Agent
Good dessert planning starts before anyone counts heads, and Jess is the one asking who's actually coming — since demographic mix, vendor meals, and service style all shape how many shortcakes a crowd will enjoy. That approach carried her through a 5,000-guest Southwest Airlines event and a 5-day stretch readying 10 trucks for 50 events and about 7,500 guests, with each truck stocked on the correct menu so the sweet finish never runs short. She also checks insurance, safety compliance, references, and fire-risk gaps ahead of time, part of how our team helps plan dessert service around guest count, timing, and setup.
John
Food Truck Booking Agent
Pairing the right shortcake-style setup with the right celebration is John's specialty, and he keeps service speed, permitting, parking, COIs, and timing working together so the sweetness never gets held up. His Denver permit and fire inspection background carries into Los Angeles, Orlando, Miami, Sacramento, Washington, DC, and other major markets, giving him a grounded sense of what dessert service for events truly requires city to city. That steadiness showed on the highway to Ontario, when a trailer's tow vehicle lost a radiator hose and John arranged a rented replacement so the treats still arrived on time — a save that brought the client back the following year.
Kaleb
Food Truck Booking Agent
For The Strawberry Shortcake, Kaleb plans dessert service the way he plans everything else — with a backup ready before it's needed, the instinct that once had a substitute truck coordinated in under 20 minutes after a catering truck's wheel bearing gave out en route to an event. That same steady coordination let him pivot a 200-guest wedding from buffet to food truck service with just 30 minutes' notice, and it's why he checks current fire extinguishers, valid health and fire licenses, and labeled, organized coolers before any shortcake or dessert buffet setup gets his sign-off. His planning advice for a sweet, cheerful dessert experience stays simple: a spot to park and a crowd to serve.
Simon
Food Truck Booking Agent
Simon helps plan sweet dessert service for events with a decade in catering behind him, including 3 years leading prep kitchens and 7 years running trucks day to day. He's worked brand events with Kroger, Amazon, and FedEx alongside recurring Southwest Airlines dates for around 1,200 employees per event, and he still points to the fall festival that grew from an expected 100 guests to nearly 300 as proof that a quick commissary run can keep a dessert line moving without losing quality. When groups want a cheerful, bright finish to their event, his advice is simple: keep the treats to the favorites so service stays fast and fun.
Stephen
Food Truck Booking Agent
Sweet dessert service still comes down to logistics, and Stephen has that side covered — years spent cooking, driving, and serving across more than a dozen food trucks, plus a role helping manage a 12-truck operation, taught him how to keep any event on schedule. He's organized corporate events for 1,000-plus guests, helped prep over 3,000 meals in a single day, and once turned a next-day request into a fully booked event within the hour. When a catering truck's trailer hitch failed, Stephen had a team re-hitch it and rolling into service 50 minutes ahead of schedule — the same steady planning he now brings to a cheerful dessert option for groups, thinking through guest count, timing, and setup so the sweet finish arrives right on time.
Thomas
Food Truck Booking Agent
Sweet dessert service for events still starts with the same groundwork for Thomas: COIs, permits, insurance minimums, and a track record that holds up to Denver Department of Public Health & Environment and Denver Fire Department standards before a truck is cleared to serve strawberry shortcake-style treats. That habit goes back to 2016, built through concept ownership and catering-team coordination, and it held firm when a generator quit mid-event — he spotted the low-oil shutdown, topped it off, and had the dessert buffet back in front of guests within minutes. His advice for hosts stays bright and simple: plan the service flow, not just the menu.
Zo
Lead Booking Agent & Food Truck Consultant
When Zo helps plan sweet dessert service for events, he's leaning on close to 16 years spent directly behind trucks, smokers, and kitchens, plus a hand in thousands of catering and food truck bookings overseen along the way. His background includes stretches with Quest Diagnostics, Monster Energy Drink, St. Joseph Hospital, and NFL LA Chargers staff, a culinary degree, ServSafe certification, and the day he coordinated eight large holiday events at once with a lean crew. That same steady hand, plus a good read on Douglas County and Castle Rock fire expectations, keeps strawberry shortcake-style treats bright, nostalgic, and easy to enjoy from setup to last guest.
